今回の open campus は、鶏をテーマに集まりました。キャンパスで飼育している鶏は、人間では食べきれなかった野菜や肉のスジを食し、それを糧に卵を産みます。糞尿は土を活性化させ、人間では成しえないさまざまな役割を果たしています。

前回の open campusでは、血筋の循環も新しくしていかねばならず、雄の交代が必要となり、雄の数を減らしました。

その鶏を使用して、北海道の食材を用い、少量の材料ですが皆で感謝しあえる参鶏湯（サムゲタン）風のスープを調理しました。鶏を部位ごとに切り分ける精肉：Fabricationの方法を共有しつつ、最初は「丸ごとの鶏を切るのは初めて」と不安だった高校生も、シェフとコミュニケーションを取りながら自信を持って作業を進めました。

スープが完成した後は、地元の食材でBBQ。BBQの語源を辿るとバルバコアに辿り着きながら、みんなで食を囲みました。

The continuing series of open campus is an outdoor lunch that focuses on the transitioning roles of roosters on the campus from environmental and ecological roles to food security. 

Using the chicken that was butchered last time, the chef prepared Samgyetang by stuffing rice inside the chicken using spice and local ingredients. Together with the high school students helping in the kitchen, they then learned to fabricate the chicken. The task seemed daunting at first because some of them said they’ve never cut a whole chicken before, nonetheless, they were able to complete the task confidently with the chef. 

After the soup was ready, everyone enjoyed it with barbecue and rice, where we conversed about the origin of barbecue to be barbacoa.
